Summer is approaching, well at home it's not too obvious, but a little ice cream is always a good idea! After the snickers and peach ice cream, I’ve tried the coconut ice cream. Great success! It is very good, but of course you have to like coconut!


For this recipe you need

  • 1 can of coconut milk (40cl)


  • 10cl of milk


  • 2 egg yolks


  • 120g of sugar


  • 50g of grated coconut


  • 15cl of liquid cream


Heat the coconut milk with the milk. Meanwhile, mix the yolks, sugar and grated coconut.


Once the milk is hot, pour it over the egg mixture while stirring to prevent the eggs from coagulating.


Return to the heat, add the cream and let the mixture thicken.


Allow the mixture to cool completely before pouring it into an ice cream maker or put it in the freezer.


Tip for those who do not have an ice cream maker but want to obtain a creamy ice cream: 


2 solutions:


  • Take the mixture out of the freezer several times during the setting and beat with  an electric mixer.


  • Let the ice cream set completely in the freezer and mix it just before serving.
